Secondary Chemistry Students made pancakes to learn and observe physical and chemical changes! We learned that the baking powder reacts to produce a new substance, Carbon dioxide as the batter forms bubbles. Proteins in eggs and milk unfold (denature) and then bond together (coagulation), these new chemical bonds from to help give the pancake a solid structure helping to hold its shape. Starches in flour absorb the liquids and swell when heated, thickening the batter and gives pancakes their soft spongy texture! This is considered more of a physical change, but it supports other chemical changes during cooking. We also talked about the Maillard Reaction (browning), that occurs between the sugars and proteins at high heat. This causes the golden-brown color and creates new flavors and aromas.

Overall, our time in the student kitchen was a success. Students practiced reading and following a recipe, working with fractions to double the ingredients, and collaborating as a team. We enjoyed our homemade pancakes with real maple syrup and shared our extras with our amazing staff. Chemistry students agreed—the recipe was a keeper!

Easy Fluffy Pancakes
1 1/2 cups flour
2 TBSP Sugar
1 TBSP Baking Powder
1/2 tsp salt
1 1/4 cups milk
1 large egg
5 TBSP unsalted butter
2 tsps of vanilla extract

Let's take a moment to celebrate Jaxsyn & RubyJo for being SHINING examples of Riverway's Key Principles.

E1 was so excited to have Jaxsyn back to the E1 classroom this year. Jaxsyn is a self-motivated and independent learner. He loves to learn and is always working hard. Jaxsyn is also a kind friend and a helpful student to teachers and other students. Jaxsyn is a positive role model to others in our classroom. Keep up the great work!

RubyJo is incredibly hard-working, kind, and smart. I notice her helping others with their work every single day. She is both patient and observant. RubyJo notices when others are feeling down, and she takes the time to listen to them. RubyJo is fun to be with because she's funny, active, and nice! We are grateful for her!

S1 students spent the afternoon at Willet Stained Glass Studios to learn how the art form is created /restored and what skills and experiences are needed to work in the field. From learning the history of the company to watching the CAD machine cut glass for new pieces, students walked away with an appreciation for the craft and the people who practice it. Thank you for the experience!
